Nutrition info will be whatever the nutrition info is for the turkey and probably less fat than it actually says since you can pat off a lot of fat when drying. Keep in mind you don't want to make jerky an every day meal. Even if you cut back on the sodium it is still a lot. As an occassional meal or when traveling it is okay.
