I'm looking to buy a baby mushroom and start making my own. Found one at a good price on e Bay. Been looking and reading the info, but can't find the answer to this complex question: If I buy a mushroom grown with caffeinated black tea and regular sugar, can I brew my first batch with decaffeinated organic green tea and organic sugar, and will my product be decaffeinated and organic? After several cycles when you've built up a new SCOBY, the older one can be used for various purposes or composted (please don't just thrown excess SCOBYs in the garbage... they are so magical they deserve at least to recycle into the earth). When you've begun using the new SCOBY, you can feel confident of your culture's organically cultured status. But even from your first brew the results will be healthy and for all practical purposes, organic. For anyone who doesn't know, there are a couple of links that list sources for SCOBYs that will send for just the cost of shipping and packaging: There is a folder with the contact information for people on this list who agreed to share Kombucha.
