Guest guest Posted January 19, 2006 Report Share Posted January 19, 2006 Someone recently asked about whether KT should be aged before refrigeration, saying that they had been told 5 days or something but that they kept getting broken bottles. I really don't think recommendations like that can be made across the board because everyone's brewing environment is individual. Some people can leave bottled KT out for 5 days without incident, and others absolutely can't without mishap because of their indoor temperature and particular brew. And on and on with all these other " shoulds " , particularly on the question of bottling. If anyone is having a consistent problem with broken bottles, they need to alter their process so that's not happening. It's not ok and certainly not required in order to enjoy healthy KT. What I recommend you do is bottle your KT and put it in the fridge. Drink. If it's not like you want, then go from there with experimenting with aging, 1 day at a time. 1 day can make a huge difference. A lot of people say to bottle and refrigerate immediately, so there's no inherent requirement for leaving it out.
