Hi and EveryOne,

It is my impression that several layers of Kombucha Colony also tends

to keep the fermentation in the brew. Once the top is sealed by the

top culture it should make no difference except maybe the additional

weight of more colonies.

In any case it certainly is a good way to store them:-))
