I just know that the settling is normal. Our DAN doctor can bee seen on youtube.com demonstrating the making of the kefir and how it should look. Just make sure you use young coconuts (not the brown, hairy guys) and make sure the liquid is white and not pink, which would mean it's rotten. Congrats on the potty progress! I keep transfering with the original batch until it gets to be real vinegar tasting.
