Guest guest Posted March 16, 2006 Report Share Posted March 16, 2006 Hi Sue, no need to buy lentil soup prepared, it's very easy to make yourself: LENTIL SOUP 2 cups lentils 1 large onion 2 garlic cloves, crushed 1/3 cup olive oil 2 bay leaves 6 cups water 1/4 cup vinegar salt and pepper 1. Pick over lentils and wash well. 2. Placed in a large pan and add onion, garlic, olive oil, bay leaves and water. 4. Reduce heat and simmer gently for 1 hour or until lentils are soft. 5. Stir in vinegar and salt and pepper to taste. (Puree if you are in the juice/mushy stage).
