I think it is only cucumbers but they do a lot of different ways. They have one type of pickle that they open it up by cutting out a square and them scoop out the insides. Next they fill it with onions and herbs and sew (yes, needle and white thread) the piece they cut out back in place! Next it is placed in a brine. I am hoping to go this weekend.
