Guest guest Posted November 24, 2008 Report Share Posted November 24, 2008 One of the ways we eat kale is to chop up a whole head of it and roast it in the oven with 2 sweet potatoes, 1 onion, 1 apple, 1/2+ c. pecans, olive oil (or butter), salt, and a few T. of maple syrup...and maybe a little cinnamon, nutmeg, cardamon, ginger, and cayenne. Heat the oven to 350-400, depending on how quick you want it done, and how often you are willing to check/stir. Chop potatoes, onion, and apple into aprox. 1 " cubes, mix everything in a large bowl, spread on a baking sheet, and bake. I initially set my timer for about 15 min., then open the oven and flip everything with a spatula. From there I check it again in another 10 min., then every 5 there after.
