I have a 10 year old son who is a really picky eater. The kid doesn't have an ounce of fat on him, especially during the outdoor running season. Needless to say, I'm always looking for ways to sneak good fat into this kid. He loves the grass fed beef we get at Sweetland Farm, especially when I make it into burgers for him. When making the burgers this week, I took some of Will's side pork and cut it into tiny little cubes, seasoned it and sauteed it. Then, I added the pork into my burger mixture. I also made sure I used the fat left in the pan to make these babies extra juicy. Yum! He ate the whole thing, oh how it does a mother's heart good to see your kid eating great food for his mind, body and spirit. Go get your side pork! I tasted the samples Will was giving out last weekend, but I can't get it to be as tender (turns out rubbery and tough). I cooked it at a low temperature and didn't let it get anywhere near crispy.
