This was left behind at the restaurant by an old pastry chef. I once caught her

plagiarizing a Charlie Trotter recipe word for word and calling it her own so I

don't feel so bad sharing. I've never made this myself. Keep in mind this

recipe is for restaurant volumes.

Granola recipe:

12 cups rolled oats

2/3 cup unsalted sunflower seeds

1 cup unsweetened shredded coconut

1/2 cup sesame seeds

1 cup oil

1 cup honey

1/2 cup maple syrup

1/4 tsp. vanilla extract

dried apricots

dried cranberries

currants

Preheat oven to 300 degrees F.

Mix dry ingredients(minus the dried fruit) in large bowl.

In a small saucepan combine oil, honey, maple, and vanilla. Heat over low until

mixture is warm enough to blend together.

Pour wet ingredients into dry and mix thoroughly.

Spread mixture onto full size sheet pan and toast for approximately 1 1/2 hours,

stirring every 15 minutes.

Granola is done when golden brown. Remove from oven and stir in dried fruit.

Cool completely and store in an airtight container.

sliced almonds to

that recipe.

I noticed 's recipe is not soaked. Does that mean I can stop

feeling guilty about feeding my kids homemade granola with good stuff

that just isn't soaked? So few of their grains are soaked right now

and none of their nuts... sigh.

Guilt? Get rid of it. It's toxic. Just do your best.

So far, I just soak the oatmeal that we eat hot and still buy organic

granola for a treat with yogurt and kefir.
