Kathy,

I am not eating any sugar or starch right now, so I made your dessert

for myself for Thanksgiving Dinner. (Yes, that meant no stuffing,

potatoes, gravy or pie for me-I survived.) I was so grateful that you

shared it, as I really enjoyed it and didn't feel deprived.

For my Thanksgiving Dinner, I had some cream of wild rice turkey soup,

nuts, and green beans, with your cranberry apple dessert. OK, so wild

rice has some starch in it, but the soup was loaded mostly with turkey

and mushrooms (thickened only with cream-I know, I made it myself!)

and I avoided stuffing, potatoes, gravy and even sweet potatoes.

Pretty good for me, I think. And I felt good too!

I know I am carb sensitive, so I am trying to eat pretty low on the

glycemic index. This morning for breakfast, I had some wild salmon and

sauteed spinach with olive oil and apple cider vinegar.

After attending the recent gluten conference, I am considering going

gluten-free for at least a month and/or being tested. I still intend

to tell you more about it after I have a chance to look over my notes.
