Bone broth

I made up lots of extra bone broth stock last month and froze it. Yesterday

I found a leftover piece of ham back in the freezer, so bought some white

northern beans. I washed and soaked the beans last night.

Today I rinsed the beans. Then I lightly cooked celery and onions in

butter, garlic, sage, salt & pepper. Cubed the ham, cut up potatoes and

carrots. Threw it all together and covered with chicken bone broth. I added

bay leaves.

I have two large pots simmering on the back of the stove. One for supper

(and lunches later this week) and the other to freeze and be used some night

when I'm to busy to cook. My husband says his mouth is watering from the

smell. Thought I'd share because this is inexpensive good food out of

leftover ham and chicken bone broth.

Kathy,

Sounds delicious! What a nice day to have pots simmering on the stove!

I would be tempted to also add some kind of greens-spinach, kale,

chard to the soup OR serve it with greens and cornbread and make

vinegar and/or hot sauce available.

Great minds think alike. I am going to serve with fresh greens with chopped

apple (they are so good this time of year), warm cornbread with

honey/butter. It¹s a hearty soup and the house smells so nice.

Thanks for the ideas. I have some spinach and will add that to the soup I

freeze.

Well, that sounds even better! So you saute your greens with apple?

I made some greens sauteed in coconut oil and onions this morning for

breakfast. I was afraid that my kale would be too bitter (I'm really

not that fond of kale, I only grow it because it is so hardy AND so

good for you). Anyway, the kale was fine, the frosts and freezes must

have sweetened it up a bit, and mixing it with chard helped tame the

taste too.

I also have some collard greens in the garden that I need to use.

I saw a Somali man in the grocery store some time ago, buying bunches

of them. I asked him how he was going to cook them and he said saute

them with onions and tomatoes.

I am on a mission to eat a pound of vegetables a day. So I have to

start at breakfast to get them all in. This will hopefully help to

keep me from eating other things that I shouldn't. And I'm not talking

pop and candy bars here-I'm just talking things like...bread!

I attended a conference this weekend about Gluten Intolerance put on

by Nutrition Dynamics/Metagenics. I'll have to tell you all about what

I learned in another post. Now I'm off to yoga!
