Here's one from NT called Kibbeh 1 lb ground lamb, frozen 14 days and thawed 1 cup bulger (sprouted, dried, and ground wheat) 1/4 cup red pepper (optional) in a paste 1 small onion very finely chopped sea salt and pepper 1 TBSP EVOO 1 small onion finely sliced (no this is not an accidental repeat) 1-2 lemons cut into wedges Briefly soak the bulgar in warm water for about 10 minutes, then rinse and squeeze out excess moisture. Mix with lamb, optional red pepper, and onion. Add salt and pepper to taste. Form into a mound or loaf on a plate and brush with EVOO. Garnish with onion slices and lemon wedges. Serve with pita bread or on lettuce leaves. My note: Or form into balls, and dip briefly into a hot delicious broth, melted butter, or AU JUS just before eating.
