Byerly's Wild Rice Soup This Minnesota classic is a wonderful warm way to fill up the family at dinner and have enough for leftovers for lunch. 6 tablespoons organic butter 1 tablespoon minced organic onion ½ cup sprouted organic flour 3 cups real chicken broth 2 cups cooked wild rice 1/3 cup diced Lucky Pig ham ½ cup finely shredded organic carrots 3 tablespoons chopped crispy slivered almonds ½ teaspoon sea salt 1 cup real organic raw cream 2 tablespoons dry sherry (optional) -snipped fresh organic parsley or chives Melt butter in saucepan; sauté onion till tender. Blend in flour: gradually stir in broth. Cook over medium heat, stirring constantly, until mixture come to a boil; boil and stir 1 minute. Stir in wild rice, carrot, almonds, and salt; simmer about 5 minutes. Blend in cream and sherry; heat to serving temperature. Garnish with parsley. Makes 6 cups. Freezes well.
