My sister-in-law, age 63, wrote last week she cooked her first turkey. Her mom passed away recently and had always prepared all holiday feasts (loved to cook). Hats off to you for asking. My sister-in-law just attempted a blind jab...it was a total failure. They didn't even save the leftovers. You need not worry. I've found the secret is slow cooking, checking internal temp; basting if you don't have convection oven. Most cookbooks, internet, and any butcher at a grocery can give you the best temps for removal from oven. The bird will continue to cook while it absorbs juices. The old 'check for clear juices at the leg' is pretty foolproof. Be careful not to check your bird too often, as excess holes in the skin dry out meat. Will & I talked about potential sources of turkeys months ago and I reserved some for my current customers. With well over 150 families relying on our delivery service for milk, eggs and other healthy food options, I thought I'd nail down some pastured, organic turkey hens from Larry Schultz and I have a half dozen left at this time. They are close to 12 lbs and go for $3.25 per lb. I thought that was a great value and we had good response for the Thanksgiving Holiday Market at Midtown. Let me know if you'd like to purchase one at the warehouse and I'll fill in for an overworked turkey (Will) and bring one for you. I'll work it out with the warehouse- they are most concerned about serving your needs as am I. Thanks to all that helped put together the swap & shop on Saturday. It was a great turnout.
