I have recently taken the position of Food Director at a small college and EVERYTHING that the students eat comes off the back of a Sysco truck. After living in my local - farmer - buying world for so long, this has been an incredibly eye-opening experience. Pulled-pork, precooked burgers and chicken breasts, mac and cheese bites, chicken tenders; all with so much MSG, fillers and hydrogenated oil. The true country of origin...who knows? I think so many restaurants use Sysco to keep their profit margins high and the cost to customers low. The result of a " cheap food and lots of it " culture. And unfortunately, with the current economy, I think this will become even more pervasive. I genuinely fear for the health of the students that I feed and hope to educate and improve the food offerings, so they can have some awareness of food-source and label reading. There are no restaurant police; no real " truth in menu " regulations, so asking questions and trusting the chef [which may be us, at home] will be our only options.
