Salmon and a few other oily fish are still shipped head-on; however, oily fish make nasty broth. Fallon recommends non-oily fish for broth--we learned why! Fishing in MN is about as traditional as you can get. MN is the land of 10,000 lakes. People fly here from other states just to go fishing. Wonderful state to take a kid fishing.
