Guest guest Posted June 15, 2000 Report Share Posted June 15, 2000 JOLLOF RICE( African Seasoned Rice) Ingredients Tin tomatoes ( 2 tins) Medium Onion (1) Smoked Shrimp (2oz) Curry powder ( 1tablespoon) Thyme ( 1 teaspoon) Tomatoes Puree ( small tin/ 4 tablespoons) optional prawns Mixed Vegetables( optioonal) salt ( to taste) 2 cubes of all seasoning palm oil/ vegetable oil ( 2 tablespoons) fresh hot pepper( to taste) Sweet pepper( 1 whole one) White rice( 500g) COOKING INSTRUCTIONS Blend : onion, tomatoes, smoked shrimp, hot pepper, sweet pepper all together meanwhile put oil in the pot until hot . Them add blended ingredients into the pot . Wait until well fried, Then add puree, seasoning , curry power, Thyme & salt. keep cooking for another 10 mins . If it dries out add a bit of water. Add the rice to the sauce with some water ( enough to cook all the rice in the pot ) ( fry shrimp in butter until it is crisp then add it to the sauce and rice also add the Vegetables ).
