Sweet Potato Casserole 3 cups mashed sweet potatoes 1 cup brown sugar 2 eggs, lightly beaten 1 teaspoon vanilla 1/2 cup milk 1/2 cup melted butter Topping: 1/2 cup brown sugar 1/3 cup flour 1/3 cup melted butter 1 cup chopped pecans Combine first 6 ingredients. Pour into a buttered casserole dish. Mix remaining ingredients together; sprinkle on top of casserole. Bake at 350 degrees for 30 minutes. Serves 6 to 8. also a pumpkin muffin that is good... 1 egg 1/2 cup sugar 1/2 cup milk 2 teas baking powder 1/2 cup canned pumpkin 1/2 teas salt 1/2 cup raisins 1/2 teas ground cinnamon 1/4 cup melted margarine 1/2 teas nutmeg 1 1/2 cups all purpose flour Heat oven to 400. Grease bottom only of medium muffin pan. Beat egg;stir in milk,pumpkin,raisins and margerine. Stir in remaining ingredients all at once just until flour is moistened(batter will be lumpy). Fill muffin cups 2/3 full. Sprinkle 1/4 teas sugar over batter in each cup if desired. Bake until golden brown, about 20 min. 1 dozen muffins You can also make it be sweet potatoe muffins by substituting 1/2 cup Mashed swwet potatoe for pumpkin and omitting raisins...and add 1/2 cup of pecans or walnuts...
