Iris: Thanks for the recipes...I am trying the pumpkin bars

tonight....they sound to good not to.....Joan it is nice to see you

posting and thank you also.....here is the sweet potato recipe I was

talking about...

Sweet Potato Casserole

3 cups mashed sweet potatoes

1 cup brown sugar

2 eggs, lightly beaten

1 teaspoon vanilla

1/2 cup milk

1/2 cup melted butter

Topping:

1/2 cup brown sugar

1/3 cup flour

1/3 cup melted butter

1 cup chopped pecans

Combine first 6 ingredients. Pour into a buttered casserole dish. Mix

remaining ingredients together; sprinkle on top of casserole. Bake at

350 degrees for 30 minutes.

Serves 6 to 8.

also a pumpkin muffin that is good...

1 egg 1/2 cup sugar

1/2 cup milk 2 teas baking powder

1/2 cup canned pumpkin 1/2 teas salt

1/2 cup raisins 1/2 teas ground cinnamon

1/4 cup melted margarine 1/2 teas nutmeg

1 1/2 cups all purpose flour

Heat oven to 400. Grease bottom only of medium muffin pan.

Beat egg;stir in milk,pumpkin,raisins and margerine. Stir in remaining

ingredients all at once just until flour is moistened(batter will be

lumpy). Fill muffin cups 2/3 full. Sprinkle 1/4 teas sugar over batter

in each cup if desired. Bake until golden brown, about 20 min. 1 dozen

muffins

You can also make it be sweet potatoe muffins by substituting 1/2 cup

Mashed swwet potatoe for pumpkin and omitting raisins...and add 1/2

cup of pecans or walnuts...
