Guest guest Posted May 22, 2008 Report Share Posted May 22, 2008 Hi , Gluten is a protein that is found in wheat, rye and barley etc. You may have heard of Celiacs disease (CD), an autoimmune disease. People with CD who eat gluten have an autoimmune response that causes damage in the small intestine to its villi. This, in turn, causes the small intestine to lose its ability to absorb nutrients in food, leading to malnutrition and a variety of other complications. People with CD and Gluten intolerance (GI) or sometimes referred to as Gluten sensitivity all should eat totally Gluten-free. The signs of CD or GI can range from "no" symptoms to malabsorption of nutrients with involvement of multiple organ systems. While CD and GI are caused by a reaction to wheat proteins, it is not the same as having a wheat allergy. GI affects 1 in 7 people worldwide where CD is heredity and affects 1 in 300 people. Gluten is in almost all processed foods it's used to enhance elasticity of baked and bread products, and it's used in other foods as fillers or a stabilizing agent that one wouldn't normally think gluten would be in; for example, cheese and BBQ sauce. You won't find gluten listed in these products either. Somehow, the FDA classified gluten as a generally accepted safe food. Until they reclassify gluten, it you will NOT see it listed on labels. Don't you just love how the government keeps Americans informed?? There are blood tests for Celiacs, but are not always reliable. Usually a biopsy is needed to confirm CD. Most doctors think either you have CD or nothing. I had the bloods tests three times with all negative results and believed the doctors. I finally found out by the ASI (Adrenal Stress Index) saliva test that I had GI. However, it took me another two years to find a doctor who was knowledgeable and knew what the test results meant.
