Iris: here are the recipes as promised.....Kathi in OK

Devil Dogs

1/2 c. shortening

1 c. sugar

1 egg

1/2 c. cocoa

2 c. flour

1 1/2 tsp. baking soda

1/2 tsp. salt

1 tsp. vanilla

1 c. milk

FILLING:

3/4 c. butter or margarine

1 1/3 c. powdered sugar

1/2 jar marshmallow creme

1/2 tsp. vanilla

Preparation :

Cream shortening, sugar and egg. Add cocoa. Sift flour, baking

soda and salt together and add with milk and vanilla. Drop by

teaspoon onto ungreased cookie sheet. Bake at 400 degrees for 8-10

minutes. Cool. Beat first 3 ingredients until creamy. Add vanilla

and spread on Devil Dogs, putting filling between 2 cakes.

Cream Cheese Cupcakes

Ingredients for Cream Cheese Mixture

1 8-oz package of cream cheese

1 egg

1/3 cup sugar

1/8 tsp salt (optional)

1 cup semi-sweet chocolate chips

Directions for the Cream Cheese Mixture

Whip the cream cheese to a soft consistency, then add the other

ingredients except the chocolate chips. When the ingredients are well

mixed add the chocolate chips. Set aside.

Ingredients for Cupcake Mixture

1-1/2 cup flour

1 cup sugar

1/4 cup cocoa

1 tsp baking soda

1 cup semi-sweet chocolate chips

1/2 tsp salt

1 cup water

1 tsp vanilla

1/3 cup oil

1 Tbsp of vinegar well mixed with the oil

2 Tbsp of sugar to sprinkle on top

1/2 cup chopped nuts of your choice (walnuts, almonds or pecans are

good)

Directions for the Cupcake Mixture

Sift the dry ingredients together, then slowly add the water to get a

nice batter consistency. Finally add the well mixed oil and vinegar.

This recipe will make 1 dozen medium size cupcakes. Large cupcake

forms may only yield 8. If you're using a cupcake pan grease it, or

use paper cupcake cups for less fuss.

Fill the cupcakes 1/3-1/2 with the cupcake mixture, then add a heaping

teaspoon of the cream cheese mixture to each. Use more or less

depending how many cupcakes you're making. Sprinkle sugar and the

crushed nuts of your choice over the cupcakes.(OPT) Bake at 350 F for

30-35 minutes.
