It is not even close to what the real grains can do either. They actually look like tiny heads of cauliflower. They call them grains but they are not grains in any sence of the word. They look like flowerettes. Back in the days of the Inca's carrying them around in the goatskins with their raw goatsmilk, they broke up into tiny pieces that " look " like grains. They say it is more beneficial, to keep them broken up like that, but I find it easier to strain them if they are a bit larger. Real kefir lives forever and can be shared for ever because it multiplies. It doesn't have babies, it just grows and seperates. They grow better in the summer/warmth, but do not require heating pads or anything. In fact, it takes a bit for them to " bounce " back, but when you want to slow them down, you can refrigerate them. The commercial powder of kefir is like chocolate milk. You mix it up, let it set and drink it. You can make cold yogurt with kefir grains. They adapt to the pathogens in YOUR/their surrounding area, so the yogurt is just for " you " . NO heating involved, the milk is not destroyed. Then all the nummy things you were talking about before can be made raw with this " yogurt " including cheeses of types. The directions are there on his site. Seperated cheese and kefir whey is AWESOME for many things. Raw cheese is just another way to preserve food/milk in it's " season " . You will see kefir do things no other food can do, honest. You know how to clarify. I know now I just got the "powder" and am going to order from marilyn the kefir lady tomorrow. Would have liked to order from the DOM as it sounds as though his cultures are especially medically beneficial and robust ... but I imagine many others are too! :)Thanks again for sharing your special knowledge.
