I make a wonderful veggie pot pie! There isn't really a recipe, but here it

goes.

You'll need a double recipe of ww pie crust (top and bottom)

Boil turnips (before macro, this used to be potatos), carrots in a veggie

stock. Drain reserving stock. Saute an onion, add some peas and corn.

Distribute all the above veggies in the pie crust.

Make a roux with butter and flour (sorry, don't have a veggie alternative

that works well, though I'm sure those veggie margarines would sub). Pour

in reserved veggie broth and cook until thick and bubbly. Season to taste.

Pour over veggies, add top pie crust and bake until crust is golden.

You can, of course, use any veggies. Quite often I add brussels sprouts,

green beans, mushrooms and cauliflower. The above mixture just seems to be

the most common for us since all the children like it.

When my daughter's home I also often make this. I use sesame oil in making the roux. And of course sweet potatoes are in the pie as per her request. For myself, I prefer not cooking with flour, but what I won't do for my kids!!!! Klaraseigman wrote: I make a wonderful veggie pot pie!
