Q:How did you start with macrobiotics?

A: One afternoon, my dear long time friend Renata cooked a meal for

me and sitting at the beach we talked

for the longest time with the northshore waves crashing, gentle trade

winds blowing, and warm sand beneath

us. I felt invigorated, light, happy and alive. I always remembered

that delicious and health meal.

After we both moved to Japan, My life radically change at that moment.

Q: How has macrobiotics helped you?

A: Macrobiotics opened my eyes to see the world, myself, and my

health in a completely new way.

I feel a deeper sense of peace with everything around me and a

similar intensity of love towards both

myself and others. It has given me hope when otherwise there was none.

When I learned macrobiotics in Japan, my teachers, the Nakas, opened

their hearts to me like parents,

and brought me into a community where I would have otherwise been an

outsider. Instead of being isolated

by my foreign status, I instead saw things in Japan that many people

never have a chance to experience.

For that reason, part of my goal in returning to the US and starting

to teach macrobiotics has been to develop

a similar community and social network for support, encouragement,

and learning opportunities. Currently, The

macrobiotic scene is very small here in Honolulu, Hawaii, but with a

strong community, It will flourish. Right now,

I'm working very hard to teach a many classes as possible, and to

bring some recognition to Hawaii about macrobiotics.

Q: What one piece of advice would you give to someone trying

macrobiotics for the first time?

A: Make friends with other macrobiotic people and take advantage of

the opportunities available in your community.

If there are teachers, go learn from them, and if there are

activities, participate in them. having the support of

others will go a long way. Reading a book and trying to teach

yourself to cook is not the same as taking classes

from and experienced teacher. Not only are the classes fun and great

opportunity to make new friend, but they

will help improve your cooking and condition more quickly than

exclusively attempting everything at home alone.

My favourite recipe is:

Fresh Spring Rolls

Ingredients serves 4/5

1 small bunch of watercress

1 carrot cut into large matchsticks

approximately 2 sheets of nori, cut into quarters

Fresh spring roll wrappers

Directions

Blanche the watercress and carrot in water with a pinch of salt and

set aside to cool.

With a pastry brush, lightly spread water on the spring roll wrapper

with a brush and allow

it to become soft. Place the nori on top of the wet rice paper in

the center, and then place

watercress and carrot on top of the nori. Roll it up, turning the

sides in, and then cut it into half

and serve with your favourite dipping sauce.
