~~~ my neighbour just returned from a visit to the US... bought Dr. Mercola's

book and immediately gave it to me !:-) so here's the recipe

'cauliflower mashers with gravy'

-- 1 head cauliflower, chopped into florets

-- 1/4 cup heavy cream or milk

-- sea salt and pepper to taste

-- pinch of nutmeg

steam cauliflower until tender, about 15 minutes.

puree in a food processor with the cream or milk, salt pepper and nutmeg adding

more cream if necessary

Gravy -

2 Tbsp olive oil

1 clove garlic, finely chopped

1 tsp ea. thyme and rosemary

1/2 tsp sage

1/4 tsp paprika

Celtic salt and pepper to taste

1/2 lb. mushrooms, sliced

3/4 cup veg. stock or water

1 Tbsp tamari sauce

2 Tbsp kudzu dissolved in 1/4 cup cold water

sauté garlic, herbs, salt, pepper and mushrooms in olive oil until wilted... add

stock, tamari and dissolved kudzu... bring to the boil, stirring constantly...

reduce heat, stirring constantly, until gravy has thickened... serve gravy over

cauliflower 'mashers'.

as for coconuts, AFAIK they do not need refrigeration.

I keep my brown furry coconuts on the kitchen side for

several weeks after their sell by date and they are

fine when I open them, as long as the water hasn't

dried up. I don't think they do as well in the fridge

because of the damp. Once opened, they should be kept

in the fridge
