you might want to EXPERIMENT with ginger ale, white grape juice, diluted cider

vinegar, diluted white wine vinegar or even diluted tamarind paste.... a

comination of some of the above might work too... I'd have thought getting good

organic wine in australia shouldn't be a problem.
