The only way it could be better is if it was made with unrefined sea salt. The prices range from $6-$10/lb, depending on variety and quantity, and they ship anywhere in the US. I get access to it through Blooming Prairie, the big midwest health food distributor. If you do, is it the same when you thaw it out? How do you freeze it/protect it? But it won't slice nicely or anything like that. If you get cheese is sealed, (in rind, plastic or whatever) the way to store it is out. Works fine. The cheese continues to cure nicely. Much better flavor.
