Their cheese is awesome. Raw, from grassfed Jerseys,

tastes fantastic. The only way it could be better is

if it was made with unrefined sea salt. The prices

range from $6-$10/lb, depending on variety and

quantity, and they ship anywhere in the US. Our

favorite is the Mountaineer Select.

Check for details but brunkow produces a local raw cheddar and colby

for around $3.50/lb. I get access to it through Blooming Prairie, the

big midwest health food distributor.

The second seems to suggest that at least something is grass fed.

Aubin,

I have been thinking of buying cheese from Meadow Creek Dairy, and

was wondering if you ever freeze your cheese. If you do, is it the

same when you thaw it out? How do you freeze it/protect it?

Thanks,

Cheese that is frozen will not have the same texture. It will taste

fine and do things like melt ok. But it won't slice nicely or

anything like that.

If you get cheese is sealed, (in rind, plastic or whatever) the way

to store it is out. Works fine. The cheese continues to cure nicely.

Much better flavor.
