I'm British and we call fried potatoes chips. These are easy to make too but you need a chip pan. You could try fried potatoes -- often called saute potatoes? I think the fries and wedges are cooked in the same oil. I know they don't change the oil that often - so leave it for a while after they have had wedges on the menu if you want to avoid gluten.
