Guest guest Posted January 7, 2002 Report Share Posted January 7, 2002 I was eating a salad made from raw vegetables today, and that got me thinking about how efficient is getting nutrients from vegetables. I've heard that humans lack cellulose digesting enzymes, and since all nutrients in plants are protected by the cellulose, we really need to chew them really, really well, if we eat them raw. Otherwise, the vegetables (they are mostly the hardy ones) will end up being just roughage. Maybe that's why Bieler's broths were so effective for what he used them -- the cellulose was softened by cooking.
