There are lots of recipes using almond " flour " for baked goods (the " breads " are sensational!), in _Lucy's Specific Carbohydrate Diet Cookbook_. Can be ordered from http://www.lucyskitchenshop.com, also she sells almond flour. The almonds are blanched first before grinding, which makes them more digestible. She has a Parmesan-herb bread that is out of this world. I just omit the garlic, too strong for me. Guest guest Posted January 20, 2002 Report Share Posted January 20, 2002 Here are some bread recipes using almond flour, from Lucy Rosset's book _The Specific Carbohydrate Diet Cookbook_. (The diet is grain- and sugar-free, geared for those with inflammatory bowel disease but healthy for anyone, and fits right in with an NT type of diet. For dairy, uses only fermented dairy products). Parmesan-Herb Bread 2 1/2 cups almond flour 1 cup freshly grated Parmesan cheese 1/4 cup fresh parsley, finely chopped 1/2 teaspoon oregano 1/2 teaspoon thyme 1/2 teaspoon baking soda 1/2 teaspoon salt 2 eggs 3 tablespoons butter, melted 3/4 cup dry curd cottage cheese (cultured after the cream is added-- Friendship Farmer or Hoop cheese qualifies) 1/2 cup water 2 garlic cloves, pressed Combine first 7 ingredients together in mixing bowl. In a blender or food processor, blend all other ingredients until smooth. Stir everything together. Scoop dough into 3 small (3 inch x 5 1/2 inch) buttered loaf pans. Bake in preheated 325 oven for 50-55 minutes. Cool loaves before removing from pans. My comments: I like this best without the parsley and without the garlic. I vary the herb seasonings, using 1 teaspoon total of whatever herbs I like. I use a regular size loaf pan, but smaller ones produce a higher loaf. Without baking powder or yeast, these breads don't rise much. It's much denser than grain bread, but also very dense nutrition so you tend to not eat as much. The breads keep well in the refrigerator or freezer, and slice best when chilled, but taste best when toasted, with butter! (Don't attempt to put it in a regular toaster; this stuff falls apart). You can even make crackers by making thin slices and baking at a very low temp until very crispy. Cinnamon Cookies (these are great!) 4 tablespoons butter, melted 1/2 cup honey 1 teaspoon cinnamon 1/8 teaspoon salt 1/4 teaspoon baking soda 2 cups almond flour pecan halves (optional) Place butter in a mixing bowl. When somewhat cooled, add all other ingredients, except pecans, stirring the flour in last. Form dough into 1-inch diameter balls and place on a buttered cookie sheet. Press a pecan half into each ball to flatten. If not using pecans, flatten cookies with the back of a fork. Bake at 275 degrees for 10-15 minutes or until done. My comments: I added some ginger powder too, maybe a half teaspoon, not sure. Experiment with the spices.
