Fruit Chews 1 cup dehydrated papaya (or half of it can be dried pineapple), cut into small chunks 1 cup raisins 2 cups crispy almonds 1 Tbsp. vanilla extract In a food processor combine all the ingredients. Mix until ingredients are pulverized and it should start to stick together as one mass. This takes several minutes, so I hope you have a strong motor in your food processor. Squeeze together and shape into balls. Store in refigerator. You can also press this mixture into a pie plate for a pie crust (uncooked). Fig Chews 1 c. crispy almonds 1 c. figs 1/8 c. raisins 2 heaping Tbsp. carob powder 1 T. vanilla extract Pinch of cinnamon Follow directions above. If too dry to shape well, add some coconut oil. Almond Cookie Chews This is based on the wonderful almond cookies in NT 1 c. crispy almonds 1/2 heaping cup of dried papaya, cut into pieces 1 heaping Tbsp coconut oil grated rind of 1 small lemon 2 Tbsp. honey 1-2 tsp. vanilla extract 1/2 tsp. almond extract pinch of salt Follow directions above.
