More on this below. > How can store my starter scorbies for 4 or 5 months with out >loosing them Allan, What you might do is set up your brews as per usual with your SCOBYs, and cover with the usual fabric, but then add a couple layers of waxed paper, and rubber band them down. The wax paper will help reduce evaporation, and when you return you should have lots of acidic starter/KT vinegar for culinary uses. By setting them up with the usual amount of sweetened tea, it will have lots of liquid to evaporate before a problem ensues. Although, 4-5 months is a long time. Another, probably better, option would be to put your SCOBYs in a single gallon jar and float in sweetened tea or finished KT. Take along with you, and top up as necessary to keep them floating. That might be the most foolproof. So basically you'd just be taking them along to babysit, not brew with. > can i take 5 gallons with me and drink with out refrigeaeration > > I have a 5 gallon glass jar that i could cap and this would last >me 5 weeks but again no way to keep it cool This would be the way to avoid the problem of bottles exploding, because you could simply vent the cap on the 5-gallon jar regularly (as you would, getting your daily ration out). However, without refrigeration it will continue to ferment, so by the end of the time period you would probably have VERY acidic KT there. However, all you'd have to do is dilute it and possibly sweeten it.
