Wouldn't animal based food be better for that purpose?

Or is your husband a vegeterian?

No, a low-carb diet would be awfully difficult without animal foods! :-)

But he was happy to find some beans he could eat that didn't blow his

carb count for the day, allowed him some variety on the diet, and gave

some much-needed fiber to boot. He only uses them occasionally, but I

wanted to find out more about them.
