Thanks for all the recommendations for cheese sources. We tried Meadow

Creek Dairy and are thrilled with the quality and price of the cheese.

Nobody mentioned any butter sources.. does that mean there aren't any?

Thanks,

Meg

Here in the Twin Cities, we have at least one very good source of

both grass-fed butter and cheese. Neither are raw unfortunately, but

the butter is phenomenal! It is produced by grass-based dairy co-

operative operating in SE Minnesota under the name Pastureland. The

butter and cheese are both available at all of the Twin Cities area

food co-ops as far as I know. In addition, Pastureland is supposedly

trying to find a processor to begin selling their fluid milk retail.

There is another producer called Cedar Summit Farm about an hour

south of the TC, in New Prague, that is currently constructing a

dairy processing facility to process their own butter and cheese.

They also produce beef, pork and poultry...all pastured.

There is also raw cheese produced by both Organic Valley and Cedar

Grove, unfortunately that's not grass-fed. As I understand it, the

grazing rate is significantly higher than normal, but you couldn't

really describe most of their producers as grass-based. For the

butter, however, Pastureland's product really is phenomenal. One of

the TC co-ops might be able to ship to you. Here's a list of TC co-

ops: http://www.wedgecoop.com/resources/links.html The page is

hosted by the largest and possibly oldest TC area co-op.
