Guest guest Posted July 30, 2006 Report Share Posted July 30, 2006 I find that bottling the KT when it is at the peak of flavor in my opinion will keep that flavor for as long as I have it stored. It is essential that the KT be bottled with no air in the container. Any air in the KT will aid the yeast in converting more of the remaining sugar to vinegar and make the stored KT very sharp, even approaching pure vinegar. In my brewing I find that if I don't leave some airspace in the bottles I don't get much fizz (while others find the opposite). I leave my bottles out for a few days and then refrigerate before drinking. Mine don't go to vinegar, they actually turn into a very sparkling wine type of flavor, the flavor matures and smoothes into something very special. However, I don't store for months, we drink it as fast as I can make it.
