We can get raw milk about 2 hours away and we do make butter from that. However we are looking for a possible mail order source of raw butter. I realize that shipping milk solids over state lines is a no no for dairy producers, however if there is a known distributor out there or a known source of mail order raw grassfed butter or someone willing to send a care package we'd love to hear about it. Guest guest Posted May 7, 2004 Report Share Posted May 7, 2004 Very easy-- i used to live with the Amish, and of course that's all we had was grass fed meats and milk. You have to get raw milk and put it in wide mouth gallon jars, or a bowl. The cream separates and floats to the top. Skim it off with a ladle-- Depending on the width of the ladle, you may need to find a skinny one. Try not to get too much milk with the cream. you won't be able to get all the cream off, but get as much as you can. put the cream in a jar more than half full, but not more than 3/4. 3/4 might be too much. ( I don't know where you live) If you live in a cooler climate, make sure your cream is about 60 or 70 degrees. If you are in a real warm place, cool it off to atleast 70. It won't butter if it is too hot or too cold. Shake the jar with gusto until you see the butter separate from the buttermilk. Shake it until it makes a ball. While you're shaking, periodically stop and open the jar to release pressure if any is forming. Your jar can explode--but very rarely. When it is butter, loosen the lid and pour off the butter milk. Put the butter in a bowl, and start kneading it. more milk will come out. Pour that off-- save it for drinking or pancakes. Then pour cold water over the butter and squeeze it through your fingers. Put the butter ina ball again and pour off the water. Do this three times or so, until the water doesn't get milky when you mix the butter in it. You're trying to get out the buttermilk. When you're done rinsing, squeeze out all the water you can, and then mix the butter with salt-- knead it in. it would be easy to show you! You can read or chat while you shake the cream, it's very easy and one of my favorite chores. Something soothing about the whole process. But if you find a way for me to find any in Louisiana, it wll be greatly appericated. If there is no luck, I will be willing to order from other state. To make raw butter, I need cream and milk to success this process, right? I just want to simplify. So, I can know what I need first then do it in process.
