I would think that also includes new milk, with new bacteria. See if the taste changes with time. And inform us of results. Guest guest Posted January 30, 2002 Report Share Posted January 30, 2002 Claravale is a smaller, more artisan type dairy, and the cows are Jerseys. I've made kefir with both Claravale and Strauss (which is pasturised), and have never had a problem with bitterness.You can request Claravale at the store where you buy your raw milk even if they have stopped carrying it-- it is still available from a new ditributor, as has been mentioned in other emails.
