I've read that kefir cultures may need to adjust to

new invironment. I would think that also includes new

milk, with new bacteria. See if the taste changes with

time. And inform us of results.

Claravale is a smaller, more artisan type dairy, and the cows are

Jerseys. I've made kefir with both Claravale and Strauss (which is

pasturised), and have never had a problem with bitterness.You can

request Claravale at the store where you buy your raw milk even if

they have stopped carrying it-- it is still available from a new

ditributor, as has been mentioned in other emails.

Someone else was saying that other types of cultured Organic Pasures

is bitter or more sour than Claravale. Maybe less cream content? I

will be trying it with my kefir, but I haven't been able to get

Organic Pastures milk yet.
