It is known that certain methods can reduce phytates in grains/legumes,

including soaking in an acidic medium (1). Perhaps the small reduction in

phytates was the result of improper soaking methods (e.g., not at room

temperature or not using an acidic medium). Not having the whole paper in

front of me, its difficult to say.
