I was thinking: what if I took this nice, organic, preservative-free, store-bought salsa, added some whey, and let it sit out? Would it then qualify as a lacto-fermented food? Other than that I wonder about the tomato's acidity to the process, also wheather its been done much because tomatoes and peppers are native to this continent. It seemed to work, as in, it got a bit bubbly and tangy. But it didn't last as long as other l-f pickles--only a month or so. That might have been as long as it would have lasted without the whey, I don't know.
