We used to eat white rice, but now we eat short grain brown rice. I find it nuttier tasting than jasmine rice. I also like the consistency better as it is more together like steam rice - long rice is a bit dry for my liking. A good thing that I do as it has the same cooking time is to add in wild rice to the mix. Wild rice is not rice really it is I think a kind of algae, but it has a rice consistency and the same cooking time as a brown rice. It adds some variety. And I never throw out the leftovers - I save the rice and for breakfast will stir fry it with an egg and soy sauce and have a quick brekkie egg fried rice - the combo of protein and carbos keeps me going all morning. I too do not toss out leftovers, the next morning before aquatics I mix it with chopped chicken and low-fat cottage cheese for energy and muscle-building I absolutely love 'wild rice' - will try adding some of it too. Sometimes I wonder if the medical professionals 'miss' something when it comes to nutrients and nutritional needs of persons with CMT. We need good food, nutritious food, and more and more I am finding foods that benefits muscles and nerves. Am researching more on this plus re- reading Senneff's " Nutrients for Neuropathy " with this in mind. I get a tad bit tired waiting for researchers to get to the point with their trials, and feel there is so much I can do to help myself maintain a healthy lifestyle. ~ Gretchen in sunny So.
