Is that right? This is the way my continuous brewing works. But my new scoby forms on top of and is attached to the old scoby, so it is all one and just keeps getting thicker.... I make about a gallon each week this way. It takes me 20 minutes to make the new tea, dissolve the sugar in hot water, lift the scoby onto a dish, scoop out the KT with a jug, bottle it, pour the cooled tea, sugar water and enough filtered water back into the crock, replace the scoby and the muslin and elastic band. Not much work for 4 litres of lovely effervescent KT. I would be very interested in your microbrews, as I have been thinking exactly the same thing.... my big pot is currently full of raspberry/cranberry/elderflower KT (which is lovely) but I'd quite like some plain KT too, and don't have space for another huge crock!
