Processing food is certainly going to modify it. Soil will modify food/feed also. If cabbage from the supermarket spoils instead of fermenting, something most likely destroyed the Lactobacillus. The " fresh " supermarket cabbage is possibly more nutritive than that in the frozen section. (I received NT a few weeks ago and haven't worked any recipes into my diet, however what I've read sounds great.) It seems like some questions are topics needing more research. Don't take me wrong, but you're covering a big subject. Anyway, as you might have guessed, I'm newest member, so hello all.
