making yogurt cream

Sonja,

How do I use the cream? For the same amount of cream, I use four times as

much starter, and incubate twice as long as for milk. For two quarts of

whole milk, I use 1/4 cup of plain commercial yogurt (currently, Brown Cow),

so for cream I use one cup of yogurt. I incubate the yogurt cream for 48

hours, but only that long because I need to remove all the lactose for my

daughter. I think yogurt normally sets up after 6 - 8 hours (refrigerating

it for 8 hours afterward), so cream would take that long or longer.

These days I'm yogurt cream with 1 qt cream and 1 qt half-and-half, and I'm

using 3/4 cup starter but still incubating for 48 hours. I use it for ice

cream and sour cream.

If you don't incubate your yogurt as long, you can probably use your own

yogurt as starter for the cream, as I imagine you did in the past.
