I think the fact that they're sold live has more to do with tradition and

how the chickens are used within the immigrant asian community than how the

chickens were raised. We have a very large Hmong (SE Asia) refugee

population here in Saint , MN (the largest anywhere in the world, in

fact). One of my Hmong coworkers told me about some of the parts that they

use. From what I could ascertain by her description (she didn't know the

organ's english word) they were squeezing the bile out of the gall bladder

into certain dishes. I think that just about the only thing that doesn't

get used in some form as food is the feathers. I'm sure they traditionally

got used for something else though.

In order to get that level of utility out of the carcass when it's butchered

retail. It wouldn't surprise me if there are other cultural and perhaps

religious reasons why they are sold live as well.

Subject: Asian market with live poultry, also calcium

content of bone broth?

Does anyone know anything about these things? I noticed one walking

through chinatown the other day. My thought is that if they have live

poultry they probably aren't getting it from the standard (read:

factory farm) distribution channels, that maybe its a cottage

industry from chinese immigrants or something. If so, it would be a

lot healthier, but if not I'll stick to the hormone and anti-biotic

free chickens I can get at the health food store.

Also, does anyone have the calcium content of bone broths? I looked

on the USDA nutrient database and it was listed at 9mg - that doesn't

seem right.

Thanks for any info,
