sauerkraut tips

Hiya everyone,

Thanks for the great advice so far.

Finally got NT last week, I am watching whey drip into a bowl on my counter

right now.

When it's done I will attempt sauerkraut... Does anyone know a good

substitute for caraway seeds in the recipe? I don't have any and won't have

a chance to pick any up any time soon.

Also, does anyone have variations on the recipe (not the ones in the cookbook).

I have two onions and a few cucumber to spare, but those aren't organic.

I made sauerkraut without the seeds and it tastes great. My only

advice is to give it at least 2 months (in cold storage). 2 days is

not long enough IMO.
