Guest guest Posted February 20, 2002 Report Share Posted February 20, 2002 I'd also like to know of any brands of pickles or fermented veggies that are naturally fermented without vinegar, organic, and not pasteurized. Seems to me everything I've seen in jars is pasteurized. The Deep Roots/Biolacto fermented veggies in the plastic bags are the only ones I've found so far that meet all the criteria, but they don't seem to make cucumber pickles. Unfortunately, it may stay that way, since live foods could potentially build up pressure and burst glass jars. (I'd imagine this would mostly or only happen if the jars were allowed to warm up -- but refrigerated trucking is expensive, and pasteurization is " efficient " .) Maybe they're able to reliably keep their jars cold. Bubbies told me that one reason they started pasteurizing was that they had a problem with jars bursting, and Bio Lacto does mention their packages occasionally swelling from fermentation starting up again. I've wondered about this before too. I've noticed that the Rejuv. Foods jars often have slightly bulging lids. It's possible that they've made sure that the lids are designed to purposely leak gas at some level of pressure just below the breaking threshold of the glass jar.
