If your digestion is very good, you shouldn't have to worry about not mixing proteins and carbs (etc) because your body will excrete the HCL and enzymes that are needed when they are needed. If you are just moving into a healthy diet routine, recovering from prolonged illness or have poor digestion, then I'd follow the basic food combining rules until your digestive system is working well. Food combiners say you need one type of enzyme to digest proteins and another type of enzyme to digest carb ... and that the bod can't do the two at once. Every raw plant food is not strictly a protein... or a carb... There are some very specialized and specific food combining regimens (like Herbert Shelton and The Diamonds) and then there are more casual regimens (like the Hay Method and Bernard Jensen). I've read the arguments on both sides (yes the food combiners do address your questions) but my approach is that the best test is in your belly. Watch your combinations and see how your body reacts. For me, I can combine nearly anything except fruit and meat. From a NT perspective, I seemed to have read long ago that this combo is the most avoided in " traditional groups " though not the only one. I have found that the more cooked food you eat the better results you get with food combining. The more raw food you eat, food combining seems to be subject to the " law of diminishing returns " and less effective. Like melons should always be eaten separately. You should not combine sugars and starches as the sugar will keep your body from properly digesting the starches causing them to ferment instead of being digested. You can do a web search and you will find lots of charts that tell you what foods you can and can't combine together. Knowing these things really helps the body to properly digest the food we eat.
