Guest guest Posted February 25, 2001 Report Share Posted February 25, 2001 Apple-Pecan Coffee Cake American Diabetes Association 12 servings/Serving size: 1 slice Cake: 1 cup Fiber One® cereal 1 cup milk 1 & 3/4 cups Gold Medal® all-purpose flour 2/3 cup sugar 1/4 cup vegetable oil 3 tsp baking powder 1/2 tsp salt 4 egg whites or 2 eggs 1 medium all-purpose apple, pared and chopped Streusel: 1/2 cup coarsely chopped pecans 1/4 cup firm margarine or butter 3 Tbsp packed brown sugar 2 Tbsp Gold Medal® all-purpose flour 1/2 tsp ground cinnamon Heat oven to 375 degrees. Grease and flour square pan, 9 x 9 x 2 inches. Stir together all streusel ingredients; set aside. Crush cereal. (Place cereal in plastic bag or between sheets of waxed paper; crush with rolling pin. Or crush in blender or food processor.) Stir together cereal and milk in large bowl; let stand 5 minutes. Stir in remaining ingredients except apple; beat 30 seconds with spoon. Gently stir in apple. Spread half of the batter in pan; top with streusel. Spoon remaining batter over streusel; spread to cover. Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Serve warm. For High Altitude Locations (3,500-6,500 ft): Heat oven to 400 degrees. Decrease baking powder to 2 & 1/2 teaspoons. Bake 37 to 42 minutes.
