Would you soak in > water or milk or either? And do you need an acid in > there too? There is a good bread recipe in the archives for soaked yeast bread. See message # 464. You mix part of the ingredients the night before, and add the rest the next morning. Type in " sourdough " also and you will get all kinds of posts from the archives... " interesting idea - i don't know if it will work. my thought it that instead of soaking the flour, one would need to use flour from sprouted grains. that is, sprout the grains, dry them, grind them into flour and bake as normal with yeast. for me - i don't have time for bread making yet. i found a bread made by The Baker at my local grocery store- i'm sure they have a website. their 7-grain sourdough bread, rolls and buns are made with organic flour. no yeast, no oils. if you find their site and email them, they can tell you if they distribute in your area. there are other breads out there made with sprouted grains - i just don't buy any on a regular basis to pass along the info. deanna Quote Link to comment Share on other sites More sharing options...
