Guest guest
Just wanted to let all you liver-haters know that the raw liver tonic is actually tolerable. We were able to get some pasture fed beef liver this past fall and I tried to cook it (even did the onion and bacon thing)and it was so strong! I can barely handle chicken liver. Anyway, I made the liver tonic with semi-diluted tomato sauce (so it's thicker and you don't notice the liver as much) and extra cayenne and lime juice. I added salt and got this mixture palatable, then chilled it. If you grate the frozen raw beef liver directly into the chilled drink and drink it soon after, it ian't too bad at all! Cooking it intensifies the flavor I think... Hope this helps, Becky
